Rice salad with avocado

Ingredients

  • 300g long grain rice
  • 2 eggs
  • Pepper
  • 4 chicken thighs
  • 20 cherry tomatoes
  • 110 g of cooked corn
  • 2 lettuce buds
  • 1 sprig of coriander
  • 1 avocado
  • Vinegar
  • Olive oil
  • Salt

Preparation

  • In the blender, mix 150 ml of oil, an egg, a few drops of vinegar, and a pinch of salt until emulsified.
  • Peel the avocado, extract the pulp and chop it.
  • Add it and continue beating until it is integrated.
    Cook the rice for 16 minutes in salted water.
  • Drain it and then cool it with the cold water.
  • Cook the other egg for 10 minutes.
  • Drain it, peel it and chop it.
  • Cook the chicken for 35 minutes in salted water, let it cool, remove the skin and bone and shred it.
  • Separate the leaves from the buds, wash and dry them.
  • Divide them into individual bowls and complete them with the rice, chicken, egg, corn and tomatoes, washed and cut into wedges.
  • Dress with the mayonnaise, sprinkle with chopped cilantro, and serve.

The trick

So that the avocado pulp does not oxidize, add it to the blender glass as soon as you chop it.

Avocado salad with feta cheese

Ingredients

  • 3 avocados
  • 2 tomatoes
  • 200 g of feta cheese
  • One lemon
  • 1 onion
  • 1 sprig of coriander
  • 4 tablespoons of olive oil
  • 1 tablespoon of vinegar
  • A few drops of tabasco
  • Salt and pepper

Preparation

  • Make a few cross-shaped cuts at the base of the tomatoes.
  • Scald them for 1 minute in boiling water and cool them with cold water.
  • Peel them and cut them into small cubes, removing the seeds.
  • Peel the onion, cut it into very thin slices and leave them in ice water for 20 minutes.
  • Drain and pat dry with kitchen paper.
  • Dice the feta cheese.
  • Wash the coriander, dry it and finely chop the leaves.
  • Squeeze the lemon obtaining the juice.
  • Cut the avocados in half removing the skin and the pit.
  • Cut them into slices, sprinkle them with the lemon juice and distribute them among 4 plates.
  • Top with cheese and onion.
  • Beat the oil with the vinegar, the tabasco, and a pinch of salt and pepper.
  • Heat this vinaigrette in a pan, without letting it come to a boil.
  • Add the tomato cubes and sauté for 30 seconds.
  • Dress the salad with the warm tomato vinaigrette, sprinkle with the cilantro, and serve right away.

Warm pasta salad with tuna and avocado

Ingredients

  • 150 g pasta spirals
  • 150 g of tuna
  • 1 oak leaf lettuce
  • 1 avocado
  • 2 carrots
  • A lemon
  • Olive oil
  • 1 red onion
  • 1 tablespoon sherry vinegar
  • Pepper
  • Salt

Preparation

  • Cook the pasta.
  • Refresh it with cold water and drain it well.
  • Scrape, wash and grate the carrots. Peel the avocado, pit it and cut it into cubes; sprinkle with lemon juice so they don’t get rusty.
  • Cut the onions into julienne strips.
  • Mix 3 tablespoons of oil with the vinegar, salt, and pepper, and stir well.
  • Arrange the pasta, vegetables, add tuna and then dressing in a salad bowl.
  • Clean the lettuce, separate the leaves and wash them.
  • Divide them into 4 plates, forming a bed, and arrange the salad on top.

The trick

you can substitute the eels for chicken or quail eggs, prepare them poached or grilled.

 

Salad with avocado and cherries

Ingredients

  • 2 endives
  • 2 avocados
  • 100 g of arugula
  • 1 spring onion
  • 16 cherry tomatoes
  • ½ lemon
  • Olive oil
  • Salt
  • Pepper

Preparation

  • Wash and dry the lemon, grate its skin and squeeze it.
  • Mix 3 tablespoons of the juice with 2 tablespoons of oil, salt, and pepper and add a tablespoon of zest to this mixture.
  • Peel the avocados, open them in half, bone them, cut them into cubes, and sprinkle them with the rest of the juice.
  • Wash and dry the arugula and the endive leaves, chop them, reserving the tips whole.
  • Peel and slice the chives. Cut tomatoes and then cut in half.
  • Arrange the salad ingredients in a bowl, decorate with the reserved endive tips, dress with the vinaigrette and serve.

The trick

Wash, dry, and chop some coriander leaves, and add them to the vinaigrette. You will see what an original touch!

  • Arrange a base of leafy greens on a large plate.
  • Peel and slice the avocado.
  • Place the avocado on top of the green leaves, and then the rest of the ingredients.
  • Add sesame seeds on the top as a decoration.
